Onions

I picked all the onions this morning.  Come and get them.  They are on the porch.  Also first tomatoes.  There is a two quart box on the porch.  And beans in the garden.   That is the good news.  Bad news: crows have eaten most of the melons.  Sorry Jen.  As for the tomatoes:  I sprayed for blite this morning.  So don't pick any large tomatoes this week.  They are not ready anyway.  I didn't spray the small or cherry tomatoes so feel free to pick them.  There will be ripe cherries this weekend.

Swiss Chard


Original Recipe Yield 2 servings
 

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 bunch Swiss chard, stalks discarded, leaves cut into wide ribbons
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste

Directions

  1. Heat the olive oil on a large skillet over medium heat. Stir in the garlic and cook until tender and aromatic, about 2 minutes. Add the Swiss chard and balsamic vinegar; cook and stir until the chard is wilted and tender, about 5 minutes. Season with salt and pepper and serve.

Peas weeds and summer squash

Peas, weeds and summer squash we have got them all.  Peas are coming on hard and need to be picked. Onions need to be weeded again and young onions can be picked and are great. Broccoli  there is some to pick. Beets just a few left.  Greens will be gone soon.  Cukes are slow but there will be a lot. Summer squash needs to picked. The freedom rangers have all been processed.  If you would like any they are $4.50 lb. And come in at 4-5lbs. each.  We also have  grass feed ground beef from Darma Lee Farm for $5.00lbs.  Packs are about 1lb.

we need to side dress with compost the peppers, tomatoes and egg plants and put mulch at the ends of the raised beds to hold the plastic down

Beets

Yes beets . We have beets.  Golden and Chioggia.

We have salad greens and braising greens and butter crunch head lettuce.  There is some spinach. It is bolting and is coming out this week so if you want spinach  get  it now.  We can plant more for fall.  Herbs: thyme. sage, chive, parsley.

Made a great braised greens dish last night.

This can be made with any of the braising greens in the garden.  {beet greens, colards, mizona, or a nice mix}

3T olive oil
one medium onion diced
1 clove garlic minced
1/8 lb  Italian pancetta (Italian pronunciation: [panˈtʃetːa]) is a type of dry cured meat, similar to bacon. It is pork belly that has been salt cured andspiced (nutmegpepperfennel, dried ground hot peppers and garlic are often featured), and dried for about three months (but usually notsmoked). There are many varieties, and in Italy each region produces its own type.  

Pancetta is a great way to add a lot of flavor to a dish for very little cost.  Pancetta is about $7.00lb at your local Italian import store.  I buy a whole unsliced 1 lb chuck.  As it is a cured meat it keeps well. If unsliced.  I add  it to a lot of dishs.  Pasta sauces, soups and I have wrap a turkey w/ it.

1 lb chopped greens

brown meat, onion and garlic in a large fry pan  add salt, pepper, chill pepper to your liken.

add greens wilt down add more salt if need be.

you can add beans at this time if you like for Beans and Greens or leave as is for what I  call Pork and Greens.

Hey come on its 4:30am and the owls are eating the chickens.

Let's do some planting

 Man did we need that rain.  Thing are looking very good after the rains.

Brook and Woody brought by some bean seed that needs to go in the beds.

Onions could use a little weeding.  The end of this week some of the greens beds will need to pulled and replanted.

10 beds down

well we have are work cut out for us.

Tim and Hubert put 10  75 foot long beds down in the back garden.  Now the tomato trellis need to go in and water hooked up. And then the $150.00 of seedlings Andy P. and I bought Monday at the Farm at Miller's crossing need to be planted.  Good looking stuff.

  Andy W and I got the water hooked up on the onions.  they are coming along nicely.  w/ the water on the onions the weeds are going to take off.  And the onions.  don't want to be negative.

Brook and Jeff have both weeded the greens garden. And it is looking great.

   .  Jeff and Andy W. took home some lettuce and spinach.  The cukes along the fence in the greens garden will need weeding and so will the onions.

Talk to me about thinning the lettuce and spinach.  I will show you what to do and you start taking some home.

First post of the 2010 season

I'm going to try to be better about posting this year. I swear.

  Tim is going to put the bed maker on the tractor today.  It's been to muddy to make the beds in the tomato garden this week. Hopefully he will make the beds this weekend.

The onion garden looks good but needs the water lines put down as it is going to be hot next week. Onion need a lot of water to get any size. Onions look great.

The fenced garden needs weeding.  Everything in there is growing well.

Monday I will be going to The Farm at Miller's Crossing to buy the rest of our stock.  So lets plan on a big planting on Monday evening.

And if there was a beer club it would sponsor a Save Thacher Park float in the Vville Memorial Day Parade.
